Today I am heading back to University and Monday’s are the busiest day. I have lectures and workshops till 5 pm, meaning that unless I get my act together, this year will end up like last, running around chasing my tail and feeling as though I’m drowning under it all.
I love cooking and one of my intentions for 2016 is to cook more meals from scratch as by the end of last year, I was eating more and more ready meals especially on the evenings I am late back from university.
I also get fed up with having to choose what we eat and knowing what we are having each evening but I think if I persevere I can get over this and it will eventually become the norm.
So our meal planning for this week is:
Monday: Tuscan Chicken Stew
Tuesday: Irish Beef Stew
Wednesday: Summer Pasta
Thursday: Beef with Ginger and Broccoli
Friday: Dr Pepper Shredded Pork
Sunday: Roast Chicken
